A Fun take on summer s’mores: Marias S’mores Pops

Have you made s’mores this summer yet? We did and had a very fun time. I guess all this isolation gets our creative juices going. Because I had purchased Marias Cookies a few days ago, I decided to use those instead of graham cookies. I looked through my baking stuff and found these colorful nonpareils used in Mexican pan dulce and cookies. Why not, right? I don’t think there are rules in S’more assembling as long as similar ingredients are used. I keep telling myself that.

This was such a fun treat to put together because it added to our list of quarantine activities. My son loved it and was able to enjoy his creation. If you are on the fence about making s’mores this summer, give this twist a try and involve the kids. They can be prepared ahead of time, kept in the refrigerator. Have fun with it and decorate with red white and blue sprinkles, nuts and shredded coconut. Your choice!

Marias S’mores Cookie Pops

Description

A fun take on the s’mores with colorful sprinkles and in lollipop form. 


Ingredients

Scale

1/2 cup semi-sweet chocolate chips

20 Marias Style Cookies

3/4 cup marshmallow fluff

sprinkles or nonpareils 

popsicle sticks


Instructions

Line a large tray or plate with wax paper.  Set aside.

Place chocolate chips in microwave safe bowl.  Heat in microwave for 45 seconds; stir until chocolate is smooth and completely melted.  Set aside.

Spread 2 teaspoons marshmallow fluff on the backside (smooth side) of a Marias Cookie.  Place a popsicle stick on the marshmallow fluff spread on the cookie and cover with second cookie; resembling a lollipop cookie sandwich. 

Dip cookie sandwich halfway into the melted chocolate.  Do not hold by the stick when dipping, hold by the cookie part.  Sprinkle nonpareils on the chocolate and set cookie on the wax-paper-lined-tray.  Repeat assembling the rest of the cookie pops.

Refrigerate for 15 minutes or until chocolate sets.  Gently remove from wax paper by lifting from the stick and enjoy!
