Ingredients
1 pound sweet potatoes, spiralized (about 3 cups)
1 1/2 cups red cabbage, shredded
1 1/2 cups green cabbage, shredded
1/2 cup cilantro (packed), chopped
1/2 red or green bell pepper, sliced into strips
3 green onions, white and light green parts, sliced
3 tablespoons chopped peanuts
Dressing:
1/4 cup freshly squeezed lime juice
3 tablespoons creamy peanut butter
3 tablespoons rice vinegar
2 tablespoons sweet chili sauce
1 tablespoon toasted sesame oil
1 teaspoon vegetable bouillon
Instructions
Combine sweet potatoes, cabbage, cilantro, bell pepper, green onions and peanuts in a large bowl.
Combine lime juice, peanut butter, vinegar, chili sauce, sesame oil and bouillon in a small bowl.
Add dressing to salad and toss to combine. Serve.
