Papaya and Ginger Agua Fresca

It’s time to get ready for the warmer months. Today was 98° F in Southern California and we had to turn on our air conditioner for the first time this year. I’ve been purchasing more produce than ever lately. Because we are home more, we are snacking more and that’s where all that fruit comes in handy. I found a beautiful papaya during my last visit to Sprouts and I just had to do something memorable with it.
I decided to make a refreshing papaya and cucumber agua fresca to enjoy our time at home. Cinco de Mayo is a few days away. We usually have a nice finger food spread of tacos or quesadillas, homemade salsa and guacamole. This agua fresca will go perfect with our celebration this year.
Because we’ve been cooped up at home, I’ve been cooking more than ever. Visiting Sprouts and checking out their produce section always inspires me to create something new with fresh ingredients. No repeat meals here! If you are not a fan of papaya, Sprouts has a variety of farm- fresh and frozen produce you can use in place of papaya. Mango, pineapple and even oranges pair well with ginger. Add a little lime wedge and you have a Cinco de Mayo-ready mocktail.

Description
Refresh yourself with a cool and sweet papaya ginger agua fresca. Perfect to serve with a meal or enjoy on a warm day.
Ingredients
Ingredients for Ginger Syrup
2/3 cup freshly peeled ginger, chopped
¼ cup sugar
¼ cup water
Ingredients for agua fresca
3 cups papaya, chopped
4 cups water, divided
2 Tbsp. freshly squeezed lime juice
Instructions
1. Combine ginger, sugar and water in a small saucepan over medium heat. Bring to a simmer and stir occasionally. Decrease heat to low and continue simmering for 25 minutes. Remove from heat and let cool. Discard ginger.
2. Add papaya, 2 cups water and lime juice to a blender container. Blend until smooth.
3. Add remaining 2 cups water to a serving pitcher, stir in ginger syrup and papaya mixture. Serve cold or over ice.
