It’s that time of the year!  Time to put on our thinking caps and get creative with enticing back to school lunch ideas.  Not only do these lunches have to be quick-prep, they must be colorful, fun, tasty and most importantly… nutritious. 

I’ve been guilty of it… the lunch box rut.  I start out with the greatest intentions and slowly hit a massive block after assembling over 200 lunches every school year. Sounds overwhelming doesn’t it? It doesn’t have to be that way.

Today, I am sharing with you some of our favorite meal ideas that meet the criteria of a successful lunch. These lunch boxes are guaranteed to come home from school empty. They are simple, made with ingredients everyone loves, easy to handle, transport, store and fun to eat. 

I have found the greatest  lunch hack with Yummy Dino Buddies.  Because they are made with boneless, skinless white chicken breast meat, and are packed with protein and Omega 3, Yummy Dino Buddies have done half the work for me. All I have to do is have readily available fruits and veggies as an accompaniment.  They are the perfect versatile kid-food and can be found at your nearest retailer. Bean Rice and Chicken Burrito:

Make your child’s favorite rice variety and beans.  You can even use canned beans (rinsed) to save even more time.  Serve it with berries, carrots and a few graham crackers and hazelnut spread. Easy!

Next is my all-time lunch box favorite, Chicken Quesadillas.  Use mozzarella, cheddar cheese or your child’s favorite melting cheese.  Add a few baked Yummy Dino Buddies to the cheese as it melts and you’ll end up with a crunchy, gooey and scrumptious lunch.  Serve it with a few greens and orange slices.  So much flavor and texture in one lunchbox. 

Last, but certainly not least: Yummy Dino Buddies on a bed of rice and carrots. I served these with orange and green bell pepper sticks and a couple of mini chocolate chip cookies. It’s such a fun way to serve these little dinosaur-shaped nuggets.  This also makes a great weeknight dinner.
