Easy, breezy brunch treat: Chai Spice Muffins with Dates and Pecans
Our Summer schedule has officially begun and I am so happy things get to slow down a wee-bit for us. I am still busier than ever in the kitchen and behind the camera, but I have rearranged my calendar to block out some time for summer cooking.
Although the temperatures are rising, I’ve been spending most of my summer cooking time baking in my warm kitchen. Baked goods, such as muffins, make great treats to pack for summer camp and snacks to keep all of us happy and hold us off for the next meal.
As part of my summer routine, I’ve been spending my mornings calmly in the patio and with a hot cup of coffee in hand. It’s the perfect time to catch up on emails, plan the day ahead and enjoy a chai spice muffin with dates and pecans.
Not only do these flavorful muffins keep well for a few days, but they are also the perfect portion to serve at breakfast and brunch. They make great road trip snacks and the perfect treat when that late afternoon sweet craving arises.

If you are not a fan of chai spice tea, don’t worry. The dates in these muffins can be soaked in your favorite tea. Try it with Earl Grey tea, English Breakfast tea or a cinnamon tea. The recipe is simple, quick and so delicious, you’ll be making these delightful pastries all summer long just like me.
Chai Spice Muffins with Dates and Pecans

Ingredients
2 chai spice tea bags
1 cup boiling water
1 cup chopped dates
1½ sticks Land O Lakes® Unsalted Butter, room temperature
1 cup granulated sugar
2 eggs
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
¼ teaspoon ground cinnamon
½ cup chopped pecans
Instructions
Preheat oven to 350° F. Line a muffin tin with muffin liners.
Place tea bags in a small bowl, add boiling water and chopped dates. Set aside for 15 minutes. Discard tea bags.
Place butter and sugar in a large mixing bowl. Mix until crumbly, add eggs and continue to mix for 1 minute. Fold in tea and date mixture.
Whisk together flour, baking powder, baking soda and cinnamon in a large bowl. Add to wet ingredients and mix with a large spoon. Fold in pecans until evenly distributed.
Divide mixture evenly between muffin molds. Bake for 15-20 minutes or until toothpick comes out clean. Cool for 5 minutes in mold. Remove and finish cooling on a cooling rack.
