Upside Down Quince Cake

Ingredients

1 cup brown sugar, divided
3 tablespoons water
2 large quinces, peeled, cored and sliced 1/4-1/8-inch thick 
1 cup all-purpose flour
1 teaspoon baking powder
½ teaspoon ground cinnamon
¼ teaspoon salt

½ cup Land O Lakes® Butter with Canola Oil

2 eggs

½ cup 2% low fat milk

1 teaspoon vanilla extract


Instructions

Preheat oven to 350° F.  Grease and line an 8×8 baking dish with parchment paper.  Set aside.

 

Combine ½ cup sugar and water in a large pan over low heat.  When sugar dissolves and mixture start to bubble add quince slices.  Stir frequently, coating slices evenly in syrup.  Cook for 5 minutes.  

 

Arrange quince slices evenly in prepared baking dish.  Pour any remaining syrup over slices.  Set aside.

 

Whisk together flour, baking powder, cinnamon and salt in a medium bowl.  Set aside.

 

Combine Land O Lakes® Butter with Canola Oil and remaining ½ cup brown sugar in the bowl of a stand mixer. Mix on medium speed until creamy.  Add eggs, milk and vanilla.  Continue mixing until thoroughly combined.  Add flour mixture and continue mixing until smooth.  

 

Pour batter over arranged quince slices.  Spread evenly with a spatula.

 

Bake for 30-32 minutes or until when tested with a toothpick, it comes out clean.  Let cool in dish.  Invert on a serving tray and remove parchment paper. Slice and serve.
