Quince fruit, also known as membrillo, are in full season. It is my favorite fruit to enjoy during the transition between summer and fall. When I was a child growing up in Texas, I was especially fond of this apple-looking tart fruit because we had a huge tree in our backyard. My brother, sister and I climbed this tree at its peak to endlessly fill baskets of membrillos for all to enjoy.
Our neighbors were confused by this fruit. It was tart, very firm and seemed to never ripen. They thought it was a useless fruit that fed birds and insects. Boy, were they wrong! Membrillos were delicious right off the tree. I loved to sprinkle a little lime and salt between bites. It was refreshing and somehow became very juicy as soon as that tough first bite was taken. If it was your first time trying it, it took some getting used to that’s for sure.
Because we collected large amounts of quince fruit every season, my mom made dulce de membrillo. A sweet jelly-like spread for toast, crackers and empanada filling. Its aroma was amazing as the quince fruit simmered in sugar water. A sign that autumn had arrived in our home.

This year, I took my favorite fall fruit and made a delicious quince upside down cake to enjoy with our afternoon coffee. I used Land O Lakes® Butter with Canola Oil in this easy recipe. It’s made only with sweet cream, canola oil and salt. It spreads easily right out of the refrigerator and gives that fresh butter taste I love. Perfect for baking sweet treats.
Quince fruit season lasts until December. If you see it at your grocery store, grab a few and make this luscious recipe to celebrate the arrival of fall.

Upside Down Quince Cake
- Yield: serves 10 1x
Ingredients
1 cup brown sugar, divided
3 tablespoons water
2 large quinces, peeled, cored and sliced 1/4-1/8-inch thick
1 cup all-purpose flour
1 teaspoon baking powder
½ teaspoon ground cinnamon
¼ teaspoon salt
½ cup Land O Lakes® Butter with Canola Oil
2 eggs
½ cup 2% low fat milk
1 teaspoon vanilla extract
Instructions
Preheat oven to 350° F. Grease and line an 8×8 baking dish with parchment paper. Set aside.
Combine ½ cup sugar and water in a large pan over low heat. When sugar dissolves and mixture start to bubble add quince slices. Stir frequently, coating slices evenly in syrup. Cook for 5 minutes.
Arrange quince slices evenly in prepared baking dish. Pour any remaining syrup over slices. Set aside.
Whisk together flour, baking powder, cinnamon and salt in a medium bowl. Set aside.
Combine Land O Lakes® Butter with Canola Oil and remaining ½ cup brown sugar in the bowl of a stand mixer. Mix on medium speed until creamy. Add eggs, milk and vanilla. Continue mixing until thoroughly combined. Add flour mixture and continue mixing until smooth.
Pour batter over arranged quince slices. Spread evenly with a spatula.
Bake for 30-32 minutes or until when tested with a toothpick, it comes out clean. Let cool in dish. Invert on a serving tray and remove parchment paper. Slice and serve.
