A delightful lunch for school: Mini Bulgur and Quinoa Frittatas with Green Beans and Dried Tomatoes
As the school year sneaks up on us, I’ve been dedicating some time this summer to perfecting school lunches. Last year, my son took a lunch every single day of the school year and we easily fell into sameness of grilled cheese sandwiches by the second week of school. I wasn’t too worried about it because I focused on preparing a hearty breakfast every morning. It would at least hold him until he came home. His lunch was either half-eaten or untouched.

Since I’ve pretty much mastered “breakfast in a hurry”, I am shifting my focus on lunch this upcoming school year. I searched for ideas and researched healthy ingredients that are kid friendly and delicious, of course. Lunch also had to be easy and quick to prepare.
On my grocery trips to Sprouts, I like to look in their frozen food section for ideas and inspiration. They carry products such as frozen sweet potato tater tots which make a great side to a veggie burger or quesadilla. I also love making smoothies and aguas frescas with their frozen fruit. It’s a great way to prepare fresh and nutritious drinks from fruit. Plus, they taste delicious.
My latest find? Sprouts Organic Ancient Grain Blends. In just five minutes, a side dish is ready. Complete with grains and veggies. I just had to create a lunch with this one.
A few years ago, I made a full-size frittata and added a bit of quinoa in the egg mix. It was a great tasting brunch dish and everyone loved the idea of adding quinoa to the egg. I thought about doing the same thing here but in a smaller scale and loaded with vegetables. I opted for Bulgur and Red Quinoa with Green Beans and Dried Tomatoes variety because we love the taste of green beans, tomato and eggs. This one would be a winner for sure.
The result didn’t disappoint. I had to make several batches because they were so popular. The best thing about these frittatas is that they taste great warm or at room temperature and you don’t need silverware to enjoy them. Perfect for packed lunches and little hands.
