Grilled Citrus Marinated Pork Loin

  • 2 teaspoons ground cumin
  • 2 teaspoons dried oregano
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 6 garlic cloves, minced
  • ½ teaspoon red pepper flakes
  • 3 tablespoons orange zest
  • ½ cup fresh cilantro
  • ¾ cup orange juice
  • ½ cup lime juice
  • ½ cup extra-virgin olive oil
  • 1 (3 pounds) boneless pork loin, fat trimmed

Instructions

  1. Combine cumin, oregano, salt, pepper, garlic, red pepper flakes, orange zest, cilantro, orange juice, lime juice and olive oil in a large jar. Shake vigorously until completely combined.
  2. Place pork loin in a large freezer bag, add marinade, seal and marinate overnight.
  3. Preheat grill to 400° F. Place pork loin on the grill. Cook for 4 minutes or until grill marks appear. Turn pork loin to other side and cook for 4 minutes, repeating the process on all sides. Lower grill temperature to 350°F, close grill lid and cook for 35 minutes, basting with remaining marinade every 8-10 minutes. Use a meat thermometer to measure internal temperature. Pork loin will be ready when it reaches 140° F.
  4. Remove from grill, place on a serving platter and let rest for 10 minutes. Slice and serve over grilled orange slices and decorate with fresh rosemary.
