- 2 teaspoons ground cumin
- 2 teaspoons dried oregano
- 1 teaspoon salt
- 1 teaspoon black pepper
- 6 garlic cloves, minced
- ½ teaspoon red pepper flakes
- 3 tablespoons orange zest
- ½ cup fresh cilantro
- ¾ cup orange juice
- ½ cup lime juice
- ½ cup extra-virgin olive oil
- 1 (3 pounds) boneless pork loin, fat trimmed
Instructions
- Combine cumin, oregano, salt, pepper, garlic, red pepper flakes, orange zest, cilantro, orange juice, lime juice and olive oil in a large jar. Shake vigorously until completely combined.
- Place pork loin in a large freezer bag, add marinade, seal and marinate overnight.
- Preheat grill to 400° F. Place pork loin on the grill. Cook for 4 minutes or until grill marks appear. Turn pork loin to other side and cook for 4 minutes, repeating the process on all sides. Lower grill temperature to 350°F, close grill lid and cook for 35 minutes, basting with remaining marinade every 8-10 minutes. Use a meat thermometer to measure internal temperature. Pork loin will be ready when it reaches 140° F.
- Remove from grill, place on a serving platter and let rest for 10 minutes. Slice and serve over grilled orange slices and decorate with fresh rosemary.
