Grilled Citrus Marinated Pork Loin

Because temperatures were expected to reach 100° F, I wanted to beat the heat and grill something that was quick, delicious and large enough to feed quite a few people. Pork loin was it! Now, normally I don’t hear much about grilled pork loin, and I have no idea why! Research by the National Pork Board shows that Latinos and African Americans enjoy eating ribs and pork chops during grilling season. However, I am going to have to add pork loin to that list because we loved it!
In addition to its delicious flavor, pork is lean, and a naturally nutrient-rich source of protein that is familiar and accessible to all of us. Cuts of pork such as pork loin are the leanest cuts of pork available. It also doesn’t take much seasoning to achieve great flavor. This particular recipe calls for ingredients you probably already have in your kitchen. Because pork is extremely flavorful and a very accessible protein, you can cook it in a variety of ways. If a 3-pound pork loin is too much, you can always save the leftovers for other dishes such as chile colorado, carnitas nachos, rolled tacos and chilaquiles. The possibilities of dishes and flavors are endless.
Pork is not only flavorful, but it’s healthy too! Cooking your favorite recipes with lean cuts of pork is highly recommended. Grilling and roasting pork is a great way to utilize its natural juices. Little to no fat is needed to cook a meal for your entire family.

A tasty recipe to feed large hungry crowd: Grilled Citrus Marinated Pork Loin
This year was the first year we participated in our neighborhood’s Fourth of July bicycle parade. It was the perfect opportunity to get to know new neighbors and catch up with old ones. While the crowd gathered around the doughnut and coffee table, the children anxiously waited for the LA County Fire Department fire truck to arrive and lead the parade. The kids decorated their bicycles and scooters with red, white and blue streamers, pom-poms and pinwheels beforehand and participated by following the fire truck throughout the neighborhood. It was so much fun to see the smile on their faces as they waved to the neighbors. When the parade was over, we had the entire day to enjoy. We wiped off the grill and made the most delicious grilled citrus marinated pork loin. This was the first time I ever grilled pork loin, and I was a bit skeptical with the results not being as outstanding as a roasted pork loin. But, I was willing to give it a try!



Grilled Citrus Marinated Pork Loin
- Yield: Serves 12 1x
Ingredients

- 2 teaspoons ground cumin
- 2 teaspoons dried oregano
- 1 teaspoon salt
- 1 teaspoon black pepper
- 6 garlic cloves, minced
- ½ teaspoon red pepper flakes
- 3 tablespoons orange zest
- ½ cup fresh cilantro
- ¾ cup orange juice
- ½ cup lime juice
- ½ cup extra-virgin olive oil
- 1 (3 pounds) boneless pork loin, fat trimmed
Instructions
- Combine cumin, oregano, salt, pepper, garlic, red pepper flakes, orange zest, cilantro, orange juice, lime juice and olive oil in a large jar. Shake vigorously until completely combined.
- Place pork loin in a large freezer bag, add marinade, seal and marinate overnight.
- Preheat grill to 400° F. Place pork loin on the grill. Cook for 4 minutes or until grill marks appear. Turn pork loin to other side and cook for 4 minutes, repeating the process on all sides. Lower grill temperature to 350°F, close grill lid and cook for 35 minutes, basting with remaining marinade every 8-10 minutes. Use a meat thermometer to measure internal temperature. Pork loin will be ready when it reaches 140° F.
- Remove from grill, place on a serving platter and let rest for 10 minutes. Slice and serve over grilled orange slices and decorate with fresh rosemary.
