Fruit Macedonia with Vanilla Syrup

Ingredients

  • 2 kiwis, peeled and chopped
  • 1 Bosc pear, peeled and chopped
  • 1 apple, peeled and chopped
  • 2 bananas, peeled and sliced in rounds
  • ½ cup granulated sugar
  • ½ cup water
  • 1 vanilla bean
  • 1 key lime, juiced
  • mint leaves for garnish

Instructions

  1. Place fruit pieces in a large bowl and sprinkle with lime juice.
  2. Slice open vanilla bean lengthwise with a pairing knife.
  3. Combine water, sugar and vanilla bean in a medium saucepan. Boil over medium heat for 2 minutes. Remove from heat and set aside to cool.
  4. Discard vanilla bean from syrup. Pour syrup in fruit bowl, cover with lid or plastic wrap and cool in refrigerator for 2 hours.
  5. Distribute fruit and vanilla syrup equally into four serving bowls. Garnish with mint leaves.
