Cantaloupe Salad with Tangerine Vinaigrette

  • 1 Tangerine NESTLÉ OUTSHINE Fruit Bar, melted and stick removed (* small bar from variety pack)
  • 1 ½ tablespoons white wine vinegar
  • ½ tablespoon extra virgin olive oil
  • 1 teaspoon honey
  • 1/8 teaspoon sea salt
  • 1/8 teaspoon ground black pepper
  • 3 cups chopped cantaloupe
  • 2 cups baby spinach
  • 1 cup alfalfa sprouts
  • 1/3 cup crumbled Cotija cheese
  • 2 tablespoons pepitas


Instructions

  1. Whisk together melted Outshine bar, vinegar, oil, honey, salt and pepper in small bowl.
  2. Place cantaloupe, spinach and alfalfa sprouts in a large bowl; toss to combine. Fold in cheese, pepitas and dressing. Serve immediately.
