- 1 cup fresh cactus, sliced and rinsed
- 3/4 cup tomato, chopped
- 1/2 cup red onion, finely chopped
- 1 jalapeño pepper, finely chopped
- 1 tablespoon lime juice
- 1 teaspoon dried Mexican oregano, crushed
- 1/2 teaspoon sea salt
- 1 package Lundberg Family Farms Organi Brown Jasmin Rice
Instructions
- Place cactus in a medium saucepan. Add enough water to cover and let boil for 12-15 minutes until completely cooked and no longer gelatinous. Rinse and set aside.
- Prepare rice according to package instructions.
- Combine tomato, onion, jalapeño, lime juice, oregano and salt in a large bowl. Fold in rice until mixed well. Serve at room temperature.
