Nopalitos and Brown Rice Salad

Ingredients

  • 1 cup fresh cactus, sliced and rinsed
  • 3/4 cup tomato, chopped
  • 1/2 cup red onion, finely chopped
  • 1 jalapeño pepper, finely chopped
  • 1 tablespoon lime juice
  • 1 teaspoon dried Mexican oregano, crushed
  • 1/2 teaspoon sea salt
  • 1 package Lundberg Family Farms Organi Brown Jasmin Rice

Instructions

  1. Place cactus in a medium saucepan. Add enough water to cover and let boil for 12-15 minutes until completely cooked and no longer gelatinous. Rinse and set aside.
  2. Prepare rice according to package instructions.
  3. Combine tomato, onion, jalapeño, lime juice, oregano and salt in a large bowl. Fold in rice until mixed well. Serve at room temperature.
