The simplest foods are always the best.  Lately, my entire family has been obsessing about Flatout Foldits.  Foldits are figure-8 shaped flatbreads that fold over and create the perfectly sized sandwich or snack.  Foldits can be filled with just about anything, sweet or savory, hot or cold.


We are back at school this week and back to school snacks are in demand. My creativity must flow to keep my kiddo’s interest in enjoying something tasty to hold him over until dinnertime.  Flatout foldits can easily be prepared as quesadillas, ham and cheese or nut butter and fruit sandwiches.  This time, I decided to use dulce de leche and strawberries to make a sweet snack for all of us to enjoy.  This is something quick and easy that can also be shared as a dessert after a hearty meal.

Dulce de leche, or cajeta, can be homemade or purchased from your local Latin market.  It pairs perfectly with strawberries but you can also use bananas or any other fruit readily available in your fruit bowl.
