Enchiladas Mineras
Meatless Monday just got a bit of a Latin twist with these easy enchiladas mineras. Enchiladas mineras are vegetarian enchiladas stuffed with seasoned carrots and potatoes. The veggies are held to-gether by creamy Cacique Manchego cheese. The combination of the three is so flavorful, you won’t miss the meat not included in this dish.
