Shrimp Tacos with Poblano Cream Sauce

The long and lazy summer months are over and now it’s time to get our busy lives back in order. Our time is limited with work, school, homework and family and if one of those elements gives, our day is completely shifted. We always get to start over tomorrow but if I can find helpful tips and shortcuts to keep today productive and go off without a hitch, our schedules will be easier to handle and everyone will be happy in the end.
One of those tips that I always take into consideration when preparing quick meals is to prepare seasonings or sauces ahead of time. Shrimp and other seafood such as salmon can quickly cook in under 10 minutes. When paired with a flavorful make-ahead sauce, dinnertime is ready in just a few minutes.
This poblano cream sauce is great, not only for drizzling over your tacos but a perfect accompaniment to scrambled eggs, chilaquiles and a mid-morning quiche.
Make plenty because it will go fast. You can always store in a tight sealed container during your weekend meal prep to serve during a mid-week family meal.
