Banana Tres Leches Cake

I am ringing in the new year with a combination some of my favorite dessert flavors.  I’m a big fan of banana bread, raisins and traditional Mexican tres leches cake.  Why not whip up something amazing with all three?  Making a great tres leches can be hit or miss when it comes to the bread consistency.  The bread must be dense enough to absorb the milk without crumbling and getting too soggy, but still soft enough to retain the flavors and enjoy.

Banana Tres Leches Cake
serves 10-12

Ingredients
2 (13.7 ounce) packages Chiquita Banana Bread Mix
1/3 cup Sun Maid Natural California Raisins
1 (14 ounce) can sweetened condensed milk
1(12 ounce) can evaporated milk
1 cup heavy cream
1 teaspoon dark rum or rompope
1 tablespoon unsalted butter
2 bananas, sliced
1 teaspoon brown sugar
1/2 teaspoon ground cinnamon
1 (8-ounce) tub whipped topping, thawed

Method
Grease a 9×13 baking dish.  Prepare banana bread and bake according to package instructions, adding 1/3 cup raisins to the mix.  Set aside to cool.

In a medium bowl, combine condensed milk, evaporated milk, heavy cream an rum (or rompope).  Whisk until well combined.

Poke holes 3 inches appart on bread with a skewer and pour milk mixture on cake.

On a small skillet, melt butter over low medium heat. Add banana slices, sugar and cinnamon.  Stir for 5 minutes or until bananas begin to soften and caramelize.  Remove skillet from heat.

Spread whipped topping over bread, extending evenly.  Top with caramelized bananas and serve.
