Mediterranean Pitas

Pitas are great to enjoy and transport salads that otherwise you would not eat on their own. With a fluffy pita bread and a flavorful spread, lunch can be satisfying and vitamin-packed.

For this scrumptious recipe, I chose diced onion flavor.  But the selection doesn’t stop there: Choose from Crisp Bell Pepper, Cucumber Dill, Mediterranean Herb and Tzatziki.

Mediterranean Pitas
Serves 2-4

Ingredients
1⁄4 cup olive oil
2 tablespoon white vinegar
1⁄2 teaspoon dried oregano
1⁄2 teaspoon garlic powder
1⁄2 teaspoon white pepper
2 pita breads
Sabra Greek Yogurt Dip Diced Onion Flavor
12 heirloom cherry tomatoes, quartered
20 slices salami
1 tablespoon capers
1/3 cup feta cheese, crumbled
2 cups Persian cucumber, chopped
1⁄2 cup olives, without pits
Microgreens

Method
In a small bowl, combine olive oil, vinegar, oregano, garlic powder and white pepper.

Whisk until combined. Set aside.

Slice pita breads in half and warm them up in a skillet.

Carefully open each half and spread yogurt dip inside.  Fill with equal amounts of cherry tomatoes, salami slices, capers, feta cheese, cucumber and olives.

Drizzle with dressing and serve with microgreens.
