Mango Limeade with Chia

These days life just moves too fast and we sometimes miss the little things that happen everyday. We get caught up in our work, school projects, and raising our kids that we can forget why we are doing it all.

Once in a while you have to kick of your heels and enjoy the bare necessities of life. Family, friends, love, adventure, fun and health are important parts of life too. Lately, we slowed it down a bit and have taken time off to enjoy our evenings and weekends. We spend more time with family and friends. We plan new adventures, vacations and day trips. We also take turns in deciding what snacks and drinks we will have for our time spent together.
This week we invited little cousin Sophie over for movie night and made some Jungle Mango Lemonade with Chia. We watched The Jungle Book Diamond Edition, which is now available for the first time on Blue RayTM and Digital. We absolutely love to watch this movie. It helps us relax and remember what family and friends are all about. We learned about the bare necessities and the importance of taking time to enjoy the simple things in life. We sing and dance! We just enjoy each other’s company and forget about our strife.

Mango Limeade with Chia
- Yield: serves 10–12 1x
Ingredients
- 8 cups water
- 2 large mangos, peeled and pit removed
- 10 limes, juiced
- 1/3 cup chia seeds
- sugar or honey to taste
- ice
- extra lime slices for garnish
Instructions
- Place mango pulp and lime juice in a blender. Blend until smooth and transfer to pitcher.
- Add water and sweeten to taste. Add chia seeds, stir and let lemonade sit for 10 minutes to let chia seeds expand.
- Serve over ice and garnish with lime slices.
