College Bowl season is upon us and guess what?  It also means tailgating with your crew, cheering on your favorite team and cooking up your favorite football eats.

Whenever we tailgate or have game viewing get-togethers, my Fancy Guac recipe usually steals the show from the game action.  Even if it’s for just a moment.  After you try this guacamole, you honestly will not care who wins the game.  Really!

This fancy guacamole made with my favorite party food that good for you! Avocados are a nutrient-dense food choice with nearly 20 vitamins and minerals and it’s a great substitute for foods high in saturated fat.  The mango and pomegranate sweetness will offset the creaminess of the avocado and will balance the spiciness from the chiles.

Fancy Guac

Ingredients:
4 ripe avocados
1 cup finely chopped white onion
1 fresh jalapeno, finely chopped (leave seeds for a spicy kick)
1 fresh serrano chile, finely chopped (leave seeds for a spicy kick)
1/4 cup fresh lime juice
3/4 cup pomegranate seeds
3/4 cup mango, peeled and diced in small cubes
1/3 cup cilantro, finely chopped
1-1/4 teaspoon salt

Halve, pit and peel avocados. In a large bowl mash the avocados.  Stir in onions, chiles, lime juice and salt.  Fold in fruit and cilantro.  Add salt or extra lime juice to taste.  Serve with tortilla chips.
