Avocado Queso Fresco and Jalapeño Torta
I miss going to sporting events and watching sports on TV. I miss it so much that today I made the tortas I make when we usually go watch a soccer game.
This Avocado Queso Fresco and Jalapeño Torta is one of the best tortas you will ever have
Slices of queso fresco, fresh avocado and tangly, pickled jalapeños on a mayonnaise slathered telera bun is our stadium food. My husband was surprised I put these together without a game to cheer at. Although he thoroughly enjoyed it and would never say no to one of the best tortas he’s ever had.

Don’t skimp on any of these ingredients. This torta can be prepared with bolillos, baguettes and sourdough slices. Whatever you have on hand. You can also add onion and tomato slices but we are minimalists. This is perfect for us.

Ingredients
1/4 cup butter, divided
4 telera or bouillon breads, sliced lengthwise
1/2 cup mayonnaise
pickled jalapeños
5 ounces queso fresco, sliced
1 large avocado, sliced
Instructions
Melt 1 tablespoon butter in a large skillet or frying pan over medium heat. Place top and bottom of telera bun, cut side down. Fry both sides until edges are golden brown. Repeat with remaining buns and butter.
On a working surface, spread mayonnaise on bottom halves of buns. Top with pickled jalapeño slices and queso fresco. Place avocado slices on top half of bun. Close sandwich and enjoy!
