Your Midweek Meal Dilemma Solved: Smoky Chipotle Coffee Pork Chops
How is September here already? Time is moving way to fast, and I feel like I’m on a speeding treadmill trying to catch up with everything that must be done on a weekly basis. With these shorter days, we need quick and easy dinners to alleviate time and the stress these autumn months are about to bestow upon us.
One easy way to be a dinnertime hero is by prepping ahead. With slow cookers and pressure cookers as our kitchen helpers, our cooking time gets shortened. But what if you don’t have those time-saving appliances? Have no fear. All you need is a good marinade or dry rub and a lean and healthy protein to prep the night before.
Pork is a great protein to prep ahead of time. It’s full of flavor and versatile when it comes to cooking methods. It also pairs perfectly with your favorite side dishes. Pork chops are readily available and are one of the most popular lean cuts. They are also one of the cuts favored by Hispanic and African American households over all other cuts of meat.

This particular dry rub uses simple spices found in your spice rack. It also has a smoky kick from chipotle and coffee granules. The taste is amazing! Pair it up with some buttery mashed potatoes and roasted carrots. It’s the complete mid-week family meal.

Ingredients
- 1 tablespoon garlic salt
- 1 tablespoon instant coffee granules
- ½ tablespoon ground black pepper
- 2 teaspoons chipotle chile powder
- ½ teaspoon cinnamon powder
- ½ teaspoon ground cumin
- ½ teaspoon allspice
- 1 tablespoon granulated sugar
- 4 bone in pork chops
- Fresh thyme for garnish
Instructions
- Combine garlic salt, coffee granules, pepper, chipotle powder, cinnamon, cumin, allspice and sugar in a small bowl. Whisk to mix well.
- Lay out pork chops on a working surface. Sprinkle with seasoning mixture evenly on both sides. Place in a freezer bag, seal and press with fingers to distribute seasoning evenly. Refrigerate overnight.
- Heat an oiled cast iron skillet over medium heat. Carefully place pork chops on the skillet. Cook for 4-6 minutes on each side or until pork reaches 145 °F. Cooking time varies with the thickness of pork chop. Remove from heat and allow to rest for 10 minutes before serving. Sprinkle with thyme sprigs. Serve with roasted vegetables or mashed potatoes.
